I think the leftovers from our Christmas Eve dinner are just finally about gone, thank goodness! I’m not sure how much chicken français I could have eaten! Actually, I ended up freezing 3 days worth of chicken français and herbed potatoes for Kyle’s lunches during the week so they’re not quite gone yet but close enough I guess. By Monday night I had had enough…but I couldn’t let my potatoes go to waste…and frankly, I wasn’t just ready to give them up altogether. The are so damn good.
So I had a brainstorm. A simple one actually. I decided to repurpose the potatoes, just like you would repurpose an armoire to make it look new again, except without the toxic fumes and messy rags. Plus I had been craving breakfast for dinner for quite some time now and figured the potatoes would look lovely next to some mini egg and cheese sandwiches (which by the way were placed carefully on top of the leftover dinner rolls we had from the Eve dinner as well). I cubed up the potatoes (about 3/4 lb), cooked up some diced onions (1 medium onion) in a little butter (maybe 1 tbsp), tossed in the potatoes, added a pinch each of salt and pepper and voilá! And because the potatoes were still so flavorful from the original dish, the onions and a little extra butter only made them better. If that’s possible.
So two things. First, if you haven’t already tried Ina’s Herbed New Potatoes, you MUST! You’re totally missing out. Second, don’t throw out the leftovers! The possibilities are endless to make your leftovers look (and taste) new again.
Thatniece would call these hashbrowns. And she would tell you they are one of her favorite foods in the world.
