Hi and welcome to my 3rd installment of holiday cocktail cheer this Christmas season!

This, The Jack Frost, is the last cocktail I’ve got up my sleeve this year so if you’re tired of all the booze (gasp!), you’re in luck!

However, if you’ve missed my first 2 holiday cocktails this year, let me point you in the direction of The Mistletoe Kiss and The Peppermint Mochatini.

Both are DELICIOUS! And The Mistletoe Kiss is going over really well with the Pinterest world so maybe you want to get on board with that one first? Just a suggestion!

ANYWAY! The Jack Frost is a delightful winter recipe. It’s not about puckering up under the mistletoe or wrestling with candy cane wrappers.

Think strolling passed frosted windowpanes on snow-covered streets. And building snowmen!

And after all of that exercise and frostbite, you come home and make yourself a distinctly tropical drink. Ha!!

This cocktail is for those of you dreaming of warmer weather in the middle of winter. When the thought of another snowstorm gives you hives.

I am actually a really big fan of winter and the thought of HOT weather gives me hives.

Snow has always fascinated me. The sheer magic of it, the way it glistens in the moonlight, the way it muffles sound when piled up high.

To me, snow is the epitome of cozy. It signals in my brain the smell of a wood-burning fire. Of warm blankets. Of white hot chocolate brimming with whipped cream or marshmallow fluff.

And brisket tacos. And of course, chicken and biscuits pot pie. Winter food, you know?

So honestly, this Jack Frost cocktail, with its rum and blue curacao, didn’t really sit well with me. They remind me of summer. And I don’t love summer.

I’m not a huge fan of rum to start with – it gives me the sweats! – but I LOVED the pineapple and coconut flavors that come through in this cocktail.

I actually debated about sharing this recipe with you because I didn’t love it. But my friends who were over when I made it a few weeks back really loved it. They strongly advised me to write about it here.

Who am I to argue?

This frosty cocktail would make a really nice addition to any winter party. Girls night in? Yes! New Year’s Eve party? Why not?! There’s sure to be people in your life who don’t love champagne!

Alongside a giant dessert board? Absolutely!

Random weeknight when the snow has just gotten to be too much? Go for it!

The Jack Frost Cocktail

The Jack Frost Winter Cocktail

Yield: 2 large or 4 small cocktails
Prep Time: 10 minutes
Total Time: 10 minutes

The Jack Frost is a peppy winter cocktail that will remind you that Jack Frost won't be here forever. With rum, blue curacao, pineapple juice, and coconut cream, this one packs a punch. You'll feel like you're sitting on a beach in no time!

Ingredients

  • Honey
  • ½ cup shredded coconut (either sweetened or unsweetened)
  • 4 ½ oz white rum
  • 1 ½ oz blue curaçao
  • 6 oz pineapple juice
  • ¼ cup cream of coconut (like Coco Lopez) - see Note below

Instructions

  1. Drizzle a puddle of the honey on a small-ish plate (dessert plate size is fine). Spread the shredded coconut in an even layer on another small-ish plate. Set both aside for while you mix the drink.
  2. Shake all of the liquor, pineapple juice, and cream of coconut in a shaker with ice. Stick the shaker in the fridge while you garnish the glasses.
  3. Turn a martini glass upside and dip the rim into the honey, all the way around. You'll want a good coating for the coconut to stick to.
  4. Move the upside down glass to the second plate and set it down in the shredded coconut. Ease the coconut onto the honey on the inner and outer rim of the glass, pressing lightly as you go to help it stick. Repeat with the remaining glasses.

    Note: It will help to keep the finished glasses in the fridge on a platter so the honey stays cold which will help prevent it and the coconut from running down the glass.
  5. Give the drink mix another quick shake and quickly strain it into the garnished martini glasses. Serve!

Notes

Be sure you use cream of coconut here, not coconut milk or coconut extract. I had trouble finding this in my grocery stores, even in the ones that have drink mixers in the drink aisle. I found it in my liquor/package store though!
