It’s a mix of all the regular chicken dip ingredients with the addition of a secret flavor booster that’s going to blow your mind.

You guys, this Buffalo Chicken Dip in the crock pot is literally the best thing I’ve made in ages! It was so good, I made it for dinner recently while we dipped crostini and crackers into it.
The melted cheddar cheese and blue cheese crumbles on top just oozed on the toasted bread we dipped into it. And it was a phenomenal way to start a cold and snowy weekend in New England!
All that gooey cheese on top of this buffalo dip is absolutely the most amazing part of having a hot dip in the crock pot to serve to a big group of people!

How to Make this Easy Buffalo Chicken Dip
Here are the basic instructions for how to make these super easy buffalo chicken dip in the crock pot. Be sure to keep scrolling down to the recipe card below for the full set of Instructions!
STEP 1: Heat the Sauté function on the crock pot to High and cook the sausage until it is crumbled and browned.

STEP 2: Meanwhile, drop chunks of the cream cheese into large chunks into a large heatproof bowl. Warm the cream cheese in the microwave until soft – do not overheat the cheese!

STEP 3: To the cream cheese, mix in the chicken, some of the cheddar cheese, the hot sauce, and the ranch dressing. Transfer the dip mixture into the crock pot and stir the sausage in well.

STEP 4: Cook on Low for 4 hours then stir the dip up, add the remaining cheddar cheese and the blue cheese crumbles to the top. Cover and allow the top cheeses to melt while the crock pot is on the warm function for a few minutes. Top with the sliced scallions when you’re ready to serve.
Easy Swaps and Substitutions
Sausage: Feel free to use hot Italian sausage instead of sweet Italian sausage. Fresh chicken sausage or vegan sausage (crumbled) will work great in this dip too!
Cheese: Any kind of cheddar cheese will be great in this dip but make sure you grate it fresh from a block of cheese. Pre-shredded cheese is often packaged with a substance to prevent it from clumping in the bag, which also prevents it from melting really well.

You could also use pepper jack, colby jack, or monterrey jack in place of or in addition to the cheddar cheese.
Regular blue cheese that comes pre-crumbled in a package works great here. There’s no need to overthink what kind of blue cheese you should buy for this dip!
Hot sauce: Feel free to use whatever is your favorite brand of buffalo hot sauce. I use Frank’s Buffalo Hot Sauce, which is widely available and easy to find in most grocery stores.

Buffalo Chicken Dip for a Crowd
This recipe as written serves at least 12 as an appetizer. Fortunately, if you’re going to be feeding a huge crowd, the recipe doubles easily and no time or temperature adjustments on the crock pot need to be made.
If you double the recipe, I do recommend adding an extra package of cream cheese in addition to what you add for the doubled recipe. So, you’ll need 5 packages of cream cheese for a double recipe.

- Can the dip be made ahead? Oh yes yes yes! The wonderful thing about this recipe is that you can prepare it hours ahead of when you’ll need it, let it cook, and keep it warm in the crock pot until you’re ready to serve it.
- How many people will this dip serve? This recipe will serve at least 12 people as an appetizer.
- Can the recipe be doubled? Sure! Simply double all of the ingredients and add an 8 oz block cream cheese. (Total amount of cream cheese will equal 40 oz, or 5 (8 oz) blocks of cream cheese). This will ensure your dip stays extra creamy when it cooks.
- Can I use a different type of hot sauce? Yes, you can but you’ll want to make sure it’s labeled as buffalo hot sauce. Feel free to use whatever brand is your favorite buffalo sauce!
- Can I make this dip without a crock pot? You sure can! Simply brown the sausage in a skillet on the stove and mix it with the dip mixture in a 3 quart casserole dish. Bake the dip for 30 minutes at 350 degrees F. Top the hot dip with the remaining cheddar cheese and the blue cheese crumbles and bake for another 10 minutes. Sprinkle the sliced scallions over the top before serving.
- What if my crock pot doesn’t have a Sauté function? An easy fix! Brown the sausage in a skillet on the stove and then transfer it to your crock pot. Proceed with the recipe as written.

Crock Pot Buffalo Chicken Dip
Crock Pot Buffalo Chicken Dip will satify every craving you have for spicy buffalo wings, without all the mess of actually eating wings. This easy buffalo chicken dip in the crock pot is perfect to make for parties or for a simple appetizer dinner with crusty bread, carrots, and celery to dip in it.
Ingredients
- 8 oz sweet Italian sausage, loose or links with casings removed
- 2 packages (8 oz each) full fat cream cheese
- 3 cups shredded cooked chicken
- 1 ½ cups shredded cheddar cheese, divided
- ½ cup Frank’s Red Hot Buffalo Sauce
- ½ cup ranch dressing
- 1 cup blue cheese crumbles
- 2 scallions, thinly sliced (green and white parts)
Instructions
- Heat the Sauté function on a crock pot or Instant Pot to high. Break up the sausage and cook, stirring occasionally while breaking it up until it is browned.
- Meanwhile, cut the cream cheese into large chunks and add drop the chunks into a large heatproof bowl. Warm the cream cheese in the microwave at 20 second intervals until soft but not hot or melted.
- Once the cream cheese is softened, mix in the chicken, 1 cup of cheddar cheese, the hot sauce, and the ranch dressing with a wooden spoon or silicone spatula. The mixture doesn’t have to be completely combined. Scrape the dip mixture into the crock pot and stir the sausage into the dip mixture.
- Set the crock pot to LOW for 4 hours. After 4 hours, stir the dip up, top with the remaining cheddar cheese and all of the blue cheese crumbles. Cover the crock pot and allow the top cheeses to melt while the crock pot is on the warm function for 10 to 15 minutes. Top with the sliced scallions when you’re ready to serve. Serve directly from the crock pot.
