STEP 1: Grease an 8 x 4 ½-inch loaf pan and sprinkle the inside of the pan with the cornmeal.
STEP 2: Mix the flour, sugar, salt, baking soda, and instant yeast in the bowl of a stand mixer.
STEP 3: Heat the milk, water and oil in a microwave-safe bowl or 2-cup Pyrex measuring cup. You can also do this in a saucepan on the stovetop.
STEP 4: Milk mixture into the stand mixer bowl and mix the ingredients together until thoroughly combined.

STEP 5: Beat the dough until it becomes smooth, soft, and very sticky. Gently knead the blueberries into the dough until they are fully incorporated into the dough. Place the dough into the prepared loaf pan and even out the top with damp fingers and place a lightly greased piece of plastic wrap loosely over the top of the pan.

Gently press any blueberries that are popping out of the dough back down into the dough before baking to prevent them from overcooking.

- Will other fruit work in this recipe? I haven’t tested this recipe with other fruit but I suspect berries such as raspberries and blackberries may work because they don’t tend to release too much water when baked. Chopped strawberries may work if they aren’t already too ripe to start with.

There are definitely similarities between this bread and English muffins such as the flavor and the crispy exterior from using cornmeal in the loaf pan. Ingredients
- ¼ cup yellow cornmeal, to sprinkle in pan
- 3 cups (360 g) all purpose flour
- 1 tbsp (14 g) granulated sugar
- 2 tsp table salt
- ¼ tsp baking soda
- 1 tbsp instant yeast
- 1 cup (227 g) milk
- ¼ cup (57 g) water
- 2 tbsp (25 g) vegetable or canola oil
- 16 oz (1 pint) fresh blueberries, washed and dried
Instructions
- Grease the bottom and sides of an 8 x 4 ½-inch loaf pan and sprinkle the inside of the pan with the cornmeal to completely coat the bottom and sides with an even layer of cornmeal.
- Add the flour, sugar, salt, baking soda, and instant yeast to the bowl of a stand mixer and mix the ingredients together with the paddle attachment.
- Combine the milk, water and oil in a separate, microwave-safe bowl or 2-cup Pyrex measuring cup. You can also do this in a saucepan on the stovetop. Heat the liquid mixture to between 120°F and 130°F. To ensure an accurate measurement, stir the liquid well before measuring its temperature.
- Pour the hot liquid into the stand mixer bowl and mix the ingredients together until thoroughly combined.
- Beat the dough at high speed for 1 minute; the dough will be smooth, soft, and very sticky. Remove the mixer bowl from the mixer base and dump the blueberries into the bowl. Using your hands, pull the dough up from the sides of the pan and gently knead the dough in the bowl until the blueberries are fully incorporated into the dough. If needed, you can pull the dough out of the bowl and work the blueberries into the dough with your hands.
- Place the dough into the prepared loaf pan and even out the top with damp fingers, gently pressing the blueberries that are poking out of the dough back into the dough. Lightly grease a piece of plastic wrap with baking spray and lay the plastic wrap loosely over the top of the pan.
- Allow the dough to rise for 40 minutes. It should start to peak above the top of the pan by only about ¼-inch when it is finished proofing. Remove the plastic wrap before baking.
- Towards the end of the proofing time, preheat oven to 400°F.
- Bake for 27 to 37 minutes, until the top of the bread is golden brown and the internal temperature of the bread measures 190°F with an instant read thermometer. If at 27 minutes the top of the bread has already turned golden brown, lay a piece of aluminum foil loosely over the top of the loaf. Allow the bread to cool for 10 minutes in the pan and then remove the bread from the pan and allow it to cool completely on a wire rack before slicing.
