This is an incredible Mexican Taco Pulled Chicken Recipe!

If Mexican Pulled Chicken isn't your thing, skip the taco seasoning and mix with BBQ sauce.

INGREDIENTS

- Vegetable oil - Onions - Garlic - Taco seasoning - Petit diced tomatoes Chicken: - Boneless skinless breasts - Boneless skinless thighs

How to Make It!

Step 1: Heat & Sauté. Heat Instant Pot on Sauté setting, add oil, and cook onions. Stir in taco seasoning and garlic. Add diced tomatoes, salt, and pepper. Nestle chicken into sauce.

Step 2: Pressure Cook. Close the lid and close the vent. Set the Instant Pot to the Pressure HIGH setting for 20 minutes.

Step 3: Finish Up. Natural release pressure for 40 minutes or Quick release the vent. Shred the chicken in a bowl with two forks. 

How to Make It!

Step 4: Get Ready to Serve! Heat chocolate with coconut oil and stir until smooth. Drizzle chocolate over top of the pie. Refrigerate for 15 minutes before serving.

TIPS & TRICKS

To shred the chicken in a flash, place the hot chicken in a stand mixer bowl. Mix on medium high with the paddle attachment for about 10 seconds until it is shredded.
