Description

Pulled pork loaded baked potatoes are a BBQ lover's dream! All the flavors of your favorite BBQ pulled pork are packed into a piping hot baked potato and topped with cheese, BBQ sauce, red onions, scallions and sliced jalapeƱos to make a delicious winter dinner. It's also a great way to use leftover pulled pork you may have in your freezer!

Ingredients

Units Scale

For the filling:

  • Salted butter
  • Kosher salt and freshly ground black pepper
  • 2 cups leftover pulled pork (see Note #2 below)
  • 2 oz sharp cheddar, Monterey jack, or pepper jack cheese, shredded
  • BBQ sauce

For garnish (all optional):

  • Sliced fresh or pickled jalapeƱos
  • Thinly sliced red onion
  • Sliced scallions or green onions
  • Fresh lime juice

Instructions

  1. Heat up the pulled pork with some BBQ sauce in a small saucepan over medium-low heat for a few minutes on the stove top or in a microwave safe bowl in the microwave.
  2. Place the cooked potatoes on a baking sheet and slice each one open on the top lengthwise with a long cut and horizontally with a short cut. Push the ends together to open up the potatoes. Scoop out a few tablespoons of each potato into a bowl. Use the extra potato to make a small portion of loaded mashed potatoes with some of the filling and topping ingredients or gnocchi.
  3. Add a pat of butter and a sprinkle of salt and pepper to the inside of each potato. Divide the pulled pork between the potatoes and top with shredded cheese, and a drizzle of BBQ sauce.
  4. Drop a couple of sliced jalapenos on top along with red onions, and scallions. Serve while the potatoes are still hot.

Notes

  1. Feel free to bake your potatoes using your preferred method. However, if you’re tired of your plain ol’ baked potatoes and want crispy skins and fluffy insides every single time you make them, or you need to know how to make baked potatoes, you must try my tried and true oven baked potato recipe that I linked to above in the Ingredients list.
  2. Be sure to account for the extra cooking time needed if you’re going to make the pulled pork fresh for these potatoes. You’ll want pulled pork that has already been mixed with BBQ sauce for this recipe.
